- 1 head Pete’s Living Organic Butter Lettuce
- ¾ cup hummus
- 1 cup shredded carrots
- 2 cups shredded kale
- 10 cherry tomatoes, sliced in half
- 1 packet Hak’s Organic Olive Oil & Lemon Dressing
- ¼ cup Go Raw Sea Salt & Cracked Pepper Sprouted Seed Salad Toppers
- Take off all of the leaves of the butter lettuce head and wash and dry them.
- In a bowl, combine the kale, carrots, and Hak’s dressing. Toss to fully dress.
- Double stack two lettuce leaves to make the “boat” for each hand salad and arrange on a plate or serving platter.
- Spread about 2 tablespoons hummus on the bottom of each lettuce boat and top each with ½ cup of kale saw. Top with cherry tomatoes and finish with Go Raw Salad Toppers.
