Red Kiwi Salad

Red Kiwi Salad

WITH GO RAW SEA SALT & CRACKED PEPPER SALAD TOPPERS

Serves 2

gluten-free, nut-free, vegan option

Ingredients

  • 2 red kiwis (or regular kiwis), peeled and diced 
  • 1 medium sized cucumber, diced
  • ½ Asian pear, diced
  • ½ avocado, diced
  • ½ tbsp fresh parsley, roughly chopped
  • ½ tbsp fresh mint, roughly chopped
  • 1 tbsp feta or soft vegan cheese
  • 1 tsp lime zest
  • 1 tbsp black sesame seeds
  • ½ cup Go Raw Sea Salt & Cracked Pepper Salad Toppers
  • Salt & pepper, to taste
Dressing
  • juice of 1 lime
  • ¼ cup red olive oil
  • 1 clove of garlic, finely minced
  • 1 tsp honey or maple syrup
  • ½ tsp sesame oil
  • Salt & pepper, to taste

Directions

  1. In a medium sized mixing bowl, combine all salad ingredients.
  2. Make the dressing. Add all ingredients to a mason jar and shake well. Taste and adjust flavors as needed. Pour over salad and enjoy.
