Spicy Cilantro Pesto Dip

Serves 3-5

vegan, gluten-free

Ingredients

  • 2 cups Go Raw Sprouted Pumpkin Seeds
  • 3 garlic cloves
  • 1 cup fresh cilantro, chopped
  • ¼ cup shallot, chopped
  • 6 tbsp extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • sea salt

Directions

  1. Add all ingredients, except olive oil, into a food processor
  2. Begin to process, while drizzling in olive oil
  3. Occasionally remove the lid, stir together, and continue to process until smooth
  4. Taste, add salt if needed
  5. Serve with Go Raw Spicy Fiesta Flax Snax, fresh vegetables, or your favorite crisps.
