- ½ cup vegan mayo
- 1 ½ tablespoons apple cider vinegar
- 2 Honeycrisp apples, diced
- 1 beet, peeled and shredded
- 2 large carrots, peeled and shredded
- 1 medium head of Napa cabbage, roughly chopped
- 2 tbsp fresh dill
- ½ cup Go Raw Sprouted Pumpkin Seeds
- Salt & pepper
- In a large bowl whisk together vegan mayo and apple cider vinegar.
- Add the rest of the ingredients and toss to fully coat and mix. Salt & pepper to taste.
