Paleo Chocolate Banana Bread Bars with Pumpkin Seed Butter

Gluten free, nut-free, vegan option

 

Ingredients

  • 1⅓ cup oat flour
  • 1 tbsp cup tapioca flour
  • ½ cup cacao powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ teaspoon sea salt
  • 3 small bananas
  • ½ cup Sprouted Pumpkin Seed Butter
  • 2 eggs (flax eggs if making vegan)
  • ½ cup pumpkin seed butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp oat milk
  • `
  • 1 cup dark chocolate chunks
  • 1 pinch flakey salt

Directions

  1. Preheat the oven to 350 degrees. In a mixing bowl, whisk together the the oat flour, cacao powder, baking powder, baking soda, tapioca flour, and sea salt. Set aside.
  2. 4. In a large mixing bowl, add the bananas and mash well. Add the pumpkin seed butter, eggs or flax eggs, maple syrup, vanilla extract, and oat milk. Mix until well combined.
  3. Slowly add the dry ingredients to the wet ingredients and mix until combined. Add to a greased 8x6 baking dish and bake for 28-35 minutes, or until a toothpick is inserted and comes out clean. Cool completely, cut into bars, and serve.
