Quinoa, Kale & Peach Salad

Ingredients

Dressing
  • 1 tbsp + ½ cup olive oil
  • 1 large peach, pitted and cut in half
  • ¼ cup organic balsamic vinegar
  • 1 ½ tbsp organic honey or maple syrup
  • 1 tsp ground ginger
  • Salt and pepper
Salad
  • 1 cup uncooked quinoa
  • 1 tbsp fresh grated ginger
  • ¼ tsp smoked paprika
  • ¼ tsp sea salt
  • 3 cups kale, chopped
  • 4 large peaches, pitted and cut into cubes
  • 1 tbsp olive oil
  • ¼ cup Go Raw Sprouted Super Simple Seeds

Directions

  1. Preheat a girl and drizzle 1 tablespoon of olive oil on the peach halves for the dressing. Put peaches on the grill for about 2-3 minutes, until you get nice grill marks on them. Remove from the grill and add to a blender
  2. Add all the remaining dressing ingredients to the blender. Blend and puree until smooth. Set aside
  3. Cook 1 cup of quinoa according to package directions and stir in the grated ginger powder, sea salt, and smoked paprika into the cooking liquid while the quinoa is cooking. Once finished cooking, fluff with a fork and set aside.
  4. Add the chopped kale, cubed peaches and quinoa to a big salad bowl. Drizzle with dressing, gently toss and add the Go Raw Sprouted Simple Seeds.
